White Chocolate and Pistachio Figs Bites

Ingredients:

  • 1 cup of dried figs
  • 1 cup of white chocolate chips
  • 2 tablespoons of coconut oil
  • 1/2 cup of shelled pistachios

Instructions:

To create healthy white chocolate covered figs with pistachios, follow these steps:

  1. Soak the dried figs in hot water for 10 minutes to soften them. 
  2. Drain the figs and pat them dry with a paper towel.
  3. Melt white chocolate chips and coconut oil together until smooth.
  4. Chop shelled pistachios into small pieces for topping.
  5. Dip each fig in the melted white chocolate, ensuring full coverage.
  6. Allow excess chocolate to drip off before placing on a parchment-lined baking sheet.
  7. Sprinkle chopped pistachios over the white chocolate coating on each fig.
  8. Refrigerate the baking sheet for 30 minutes to an hour to set the white chocolate.
  9. Enjoy the healthy white chocolate covered figs with pistachios once firm.
