APPLE CINNAMON MILLET PORIDGE

This apple, cinnamon, flax seeds and millet porridge makes such a delicious breakfast. Millet is a wonderfully natural gluten-free grain that is also a good source of copper, phosphorus, manganese and magnesium.

Serves: 1

Ingredients:

  • ½ – 1 apple, sliced, core and seeds removed
  • ½ – 1 teaspoon cinnamon
  • 1 tablespoon raisins, soaked
  • 1 tablespoon milled flax seeds
  • 50g millet
  • 1 teaspoon honey or xylitol

Method:

  1. Using a very fine sieve rinse millet with hot water.
  2. In a small pan bring 150ml of water to boil, add millet and apple, don’t stir.
  3. Cover and cook on a low heat for 15 minutes.
  4. Add raisins and cinnamon and cook for further 5 minutes. Sprinkle with flax seeds.
