Pan-Fried Chicken with Mushrooms

 Serves 2 

Ingredients:

  • 1 tbsp coconut oil
  • 4 chicken thighs
  • 200g mushrooms (sliced)
  • 2 courgettes (sliced)
  • 1 red onion (sliced)
  • 1 tsp vegetable stock
  • 1 tsp tomato paste
  • Sweet paprika (to taste)
  • Salt and pepper (to taste)

Instructions:

  1. Heat the coconut oil in a large pan over medium heat.
  2. Sauté the sliced red onion and courgettes until softened.
  3. Add the tomato paste and stir until evenly coated.
  4. Add the chicken thighs to the pan, seasoning with sweet paprika, salt, and pepper.
  5. Stir in the vegetable stock and mushrooms.
  6. Cook until the chicken is fully cooked and the mushrooms are tender.
  7. Serve warm and enjoy!
